The project aims to build a holistic center for coffee processing which will be able to process 3.750.000 kg coffee cherries per year, with an output of 750.000 kg of parchment (pergamino) coffee. In this center, the coffee growers will sell the coffee cherries, unlike the traditional way in which they sell their production as parchment coffee. The center will be in charge of processing the coffee, developing the stages of wetting, fermenting, and drying.

Project Results

Around 612 coffee farms will be beneficiaries of this initiative which is hoped to take place during the Q4 of 2015. It is calculated that the center will be receiving more than 15 farmers daily, who will sell their coffee cherries to the Cooperativa de Caficultores Andes. The coffee is paid immediately after it arrives to the center at a price in accordance with its properties. Besides, over this price an add value will be paid in order to reward its high quality which will increase the income that is received for the grower. Additionally, delivering the coffee cherries to this center will reduce the effort and work a coffee grower has to spend processing the coffee to sell it as parchment (as it is usually sold). It saves time for the coffee growers, allows them to get their money faster and reduce the level of devolutions of coffee that is given due to low quality beans during de homemade process of transformation from coffee cherries to parchment coffee. It is estimated that there will be water savings up to 20.250.000 liters a year, since it is known that under the traditional way of wet processing of coffee, it is needed 30 liters per each kilogram of parchment coffee, and this center will be using 3 liters per kg. This fact will reduce as well the amount of wastewater, and it will have a treatment previous its discharge improving its quality.
